Sitting in the southwest corner of the state, San Diego is where California began, originally claimed in the name of Spain by Portuguese explorer Juan Rodriguez Cabrillo. With an average annual temperature of just over 70 degrees, everyday is a good day for a trip to the beach or a farmer’s market. The beaches are everywhere and you are likely to find a market somewhere just about any day of the week—and year-round, no less. The city’s restaurants offer everything from casual takeout to four-star dining, with the fish taco as the local favorite. You haven’t truly experienced eating in San Diego if you haven’t enjoyed one of their deep fried, battered fish wrapped in a corn tortilla with cabbage and sauce.

Chicken and Bow Tie Pasta

This recipe is so versatile and a great starting point for a wonderful pasta dish. I sauteed the garlic with some minced onion in a little olive oil and then added some leftover cooked chicken, a little white wine, a can of chicken broth, some red pepper, Italian herbs and red pepper flake and let it simmer for a few minutes, while the pasta cooked. Add the very end before pouring the sauce over the drained pasta, I added 8 oz plain low fat cream cheese (thats all I had on hand) the parmesan and 1 cup crumbled garlic/herb feta cheese. I also added about 1/4 c fresh basil confetti. This was excellent and not too rich at all.

Korean Spicy Chicken and Potato (Tak Toritang)

This was very tasty. Not sure if theres a big difference between chili paste and hot pepper paste but i used chili paste because thats what i had. I like to simmer my chicken in the broth for quit a while so i dont add my potatoes, and carrots until the last 30 mins or so of the simmering process. This is a keeper!

Raspberry Cream Muffins

SO YUMMY! Because the batter was very thick i knew i wasnt going to be able to fold the raspberries in without it becoming mush. So i scooped about a TBS of batter into the muffin tin, dropped 3 berries in the middle and filled the tins with the rest of the batter and topped it with a raspberry on top. It was perfect!
