Caramel Popcorn

Used 7 quarts of "natural" flavored (popped from the bag) off brand popcorn. It was a little salty and buttery, so I omitted the salt. Doubled all the topping ingredients (except the butter--1 and a 1/2 it, and the vanilla, tripled it). Mixed 3 c. peanuts right in with the dry popcorn before adding the caramel. Covered my baking pans with foil for super quick and easy clean-up. Got raved reviews! Thanks for the recipe.

Tuna Snack Spread

Mom's been making this for years! Only she only uses cream cheese and tuna (no salt, pepper sauce or onion powder). It always gets raved reviewer. Typically she serves it around Christmas time as it makes a perfect addition to the snack table at Christmas parties. She has rolled it in parsley or even walnuts, but it's fine the way it is. Simple and delicious. We like it with wheat thins.

Coconut Ice Cream

I've prepared this recipe two ways and both ways were excellent. The first time I didn't have any cream of coconut. *NOTE* Cream of Coconut IS NOT the same as coconut milk. Substituting coconut milk for coconut cream would be like substituting evaporated milk instead of sweetened condensed milk. That being said, since I didn't have coconut cream, I substituted with a (14oz) can of sweetened condensed milk instead and added 1 and 1/2 teaspoons of coconut extract. It turned out excellent! The second time I made it as directed. Both times were delicious.
